Eat your beauty: Cauliflower done cool

I love the Whole Foods pizza bar. They serve some really delish and creative varieties, and for some reason it feels healthier than your average slice of pizza. The reality is their pizza is not very different than Papa John’s. I wish they served this pizza made with cauliflower crust.

Cauliflower Crust Pizza(click for the recipe in its entirety)

  • 1 cup cooked, riced cauliflower
  • 1 cup shredded mozzarella cheese
  • 1 egg, beaten
  • 1 tsp dried oregano
  • 1/2 tsp crushed garlic
  • 1/2 tsp garlic salt
  • olive oil (optional)
  • pizza sauce, shredded cheese and your choice of toppings

As good as this looks, it prob wouldn’t be the same carb-licious experience, BUT you’d be getting a ton of:

  • vitamin C
  •  manganese
  • beta-carotene
  • beta-cryptoxanthin
  • caffeic acid
  • cinnamic acid
  • ferulic acid
  • quercetin
  • rutin
  • kaempferol

Translation: cauliflower is packed with antioxidants that fight free radicals—the stuff that ages our skin. Here’s another recipe that makes cauliflower feel way more indulgent that it really is:

Baked Cauliflower Poppers, that apparently taste like french fries (click for the recipe in its entirety)

  • 2 heads of cauliflower
  • 1/4 cup of olive oil
  • 1 -1/2 teaspoon of salt
  • 1 teaspoon of pepper

I will be giving both of these a go, yep.

How do you take your cauliflower?
