    Two days ago! The second cake I ever baked, and the first was just two weeks ago!

    It was a Jamaican Ginger Cake and it came out AMAZING, although there are a few tweaks I’ll make next time around!

    It came out almost too good, cuz now I’m trying to get rid of it! My husband went away on business and now I’m 5 months pregnant, stuck at home with a cake I’m afraid to eat (trying not to gain 60 lbs this pregnancy, like I did last one!) so I’m dropping it off for friends tonight!

    Wonderful cake though!

          You’ll have to figure out the conversion as I did myself, but didn’t write it down :( I still think some of the amounts were a teensy bit off so I will tweak some more next time but it was still AMAZING! And I really didn’t think it needed the icing. Just good with some ice cream or clotted cream on the side.

          I also made mine vegan, so I subbed 1/4 cup applesauce for each egg, raw coconut oil. For the butter and coconut milk for the milk.

              You’re funny!!!

              I felt like the conversion measurements were a little off because the cake came out a bit crumbly in the middle and I just felt like it could have used more flour and less sugar (I also used. Whole wheat organic flour instead of white). Like I said, you’ll figure it out! I think because of this, it came out REALLY sweet! Not too sweet, with some yummy ice cream and/ or whipped cream on the side, but I think too sweet for icing. I planned to. Make it with a date icing recipe I found (basically just 4 cups of chopped dates melted in a bit of water on the stove. When it gets frosting consistency, frost the cake… But husband came home early from work (it was also for his birthday) so I didn’t have time and then was happy cuz of sweetness!

              Anyway, can’t wait to hear if you try it! Let me know how they compare! My daughter is allergic to dairy and I’m still nursing so converting stuff to vegan has become second nature and none of my recipes has ever been affected. That’s why I think it’s the conversion and not the vegan-ness that is the culprit….

              Gonna ask hubby if he likes pineapple upside-down and maybe try it in a month or so or for my daughter’s birthday… You’re right about get out of the house! Trying to keep it classy this pregnancy and not inhale everything in sight like last time! Haha

    Yesterday. Hubby birthday request with a twist. Made double-stacked, pineapple upside-down cake with pineapple cream cheese middle…and, of course, maraschino cherries. Really think I enjoyed the activity more than the cake! :D

        That’s the tricky part….I ‘wing’ it a lot. Strain juice from 2 -20oz cans pineapple to use instead of water for Basic Betty Crocker Supermoist yellow cake mix -set aside batter. Melt 1/4c butter in each of 2 round cake pans, sprinkle 1/2c dk brwn sugar over butter, arrange pineapple slices over sugar, drop a maraschino cherry in center of each, pour 1/2 batter over each and bake til toothpick comes out clean 350 Deg Fahrenheit approx . 35_40 mins..put plate on top and flip onto plate but wait 5 mins to take pan off. Whip a package of room temp cream cheese with leftover juice, vanilla, and powdered confectioner’s sugar. When cakes have cooled, spread cream cheese mixture on top of one and slide other cake on top. Then get the cake OUT of house! Can’t wait to try your healthier one!! :-)
